Spaghetti aglio e olio with oven tomatoes

Fancy a tasty pasta? How about pasta aglio e olio with tomatoes from the oven? A very tasty and simple pasta that is on the table fairly quickly. Optionally, you can serve a piece of meat with it, such as a bacon steak. If you want to keep it vegetarian, you can add some vegetarian bacon strips to the dish, for example.

The ingredients you need:

250 gr spaghetti
3 tbsp olive oil
tomatoes
parsley
1 tsp chili flakes
Parmesan cheese
100 gr garden peas
salt and pepper

The instructions:

Start by preheating the oven to 220 degrees.
Meanwhile, cut the tomatoes into 2, 4 or 8 pieces and crush the two peeled cloves of garlic.
Place the tomatoes in a baking dish with a dash of olive oil, salt, pepper and the crushed garlic cloves. This should be in the oven for about 10-12 minutes so that the tomatoes become nice and soft.
Cook the pasta according to package directions. We prefer to eat this dish with pasta that is cooked al dente.
Meanwhile, finely chop the remaining 2 cloves of garlic. Put the olive oil in a frying pan. When the oil is hot, add the garlic, peas and chilli flakes.
Fry the garlic until it starts to turn golden. Then turn off the heat and add a little, about 3 tablespoons, of the pasta cooking water.
Once the pasta is ready, drain the water and place the cooked pasta in the pan of oil. Grate Parmesan cheese over it and mix everything together. Without Parmesan cheese you have a very tasty vegan recipe.
Serveer met de tomaatjes uit de oven.
